How to make Songpyeon (Korean Pine Rice Cake for Chuseok)

Songpyeon is a traditional Korean rice cake that you can easily make at home. It is traditionally eaten during Chuseok (harvest moon) holidays in the fall but you can have it any time of the year if you’d like! It is always steamed with pine needles and so it’s called Pine Rice Cake too. How to make songpyeon, 송편 (half-moon shaped rice cake)!

Songpyeon (송편) is a type of rice cake which is a musthave for Chuseok (MidAutumn Festival). These small halfmoon shaped rice cakes are stuffed with sweet sesame seed fillings and traditionally steamed on a bed of pine needles. The name songpyeon stems from the use of pine needles, because “song” in “songpyeon” means pine tree.

Songpyeon dough is usually colored with natural food coloring. Check the full recipes below and links for color options.

Ingredients:
For each batch dough
White dough
2 cups wet rice powder per batch (about 16 songpyeon) 쌀가루 or 쌀떡가루
Green dough
2 cups frozen rice powder thawed to room temperature if frozen
1.5 to 2 tablespoons mugwort (ssuk garu, 쑥가루) or matcha/green tea powder
Yellow dough
2 cups frozen rice powder thawed to room temperature if frozen
⅓ cup cooked steaming hot kabocha, (danhobak, 단호박)

Filling for one batch
⅓ cup roasted sesame seeds
1.5 tablespoons sugar
1 tablespoon honey
pinch salt

명절의 시작은 송편을 빚으면서 시작 되는 것 같아요~

아내의 식탁은 세 가지 모양으로, 세 가지 소를 넣어 만들어봤어요. 기본부터 꽃잎을 살포시 올린 호박 모양, 나뭇잎 모양까지! 올 추석은 색다른 송편을 곁들여 보는 걸 추천드려요.

[송편 레시피] 약 30개 분량

재료 : 멥쌀가루 5컵, 소금 1작은술, 뜨거운 물 1컵, 참기름 1큰술

소재료:
밤소: 삶은 밤 15개, 황설탕 2큰술, 꿀 1큰술, 소금 한꼬집
깨소: 갈은 깨 5큰술, 황설탕 2큰술, 꿀 1큰술, 소금 한꼬집
콩소: 삶은 검은콩 1컵, 황설탕 1큰술, 소금 1/4작은술

[INGREDIENTS] 30 pieces

5 cups of Nonglutinous rice powder, 1tsp Salt, 1 cup of Hot water, 2tbsp Sesame oil

Chestnut filling: 15 Boiled chestnut, 2tbsp Brown sugar, 1tbsp Honey, Pinch of Salt

Sesame filling: 5tbsp Ground Sesame, 2tbsp Brown sugar, 1tbsp Honey, Pinch of Salt
Black bean filling: 1 cup of Boiled black bean, 1tbsp Brown sugar, 1/4tsp Salt

step 1. 볼에 멥쌀가루와 소금을 넣고 섞은 후 체에 한 번 걸러주세요. 가루에 뜨거운 물을 조금씩 넣어가며 섞어 반죽해주세요.
반죽이 갈라지지 않도록 잘 치댄 후 반죽이 마르지 않도록 젖은 면보를 덮어 주세요. (멥쌀가루의 수분 양에 따라 물 양을 가감해 주세요)
1. Combine short grain rice powder and salt in a bowl, using a fine mesh strainer to mix. Add hot water little by little and knead enough until the dough is not break easily. Cover with a wet towel and set aside. (Adjust the hot water amount depending on the dryness of the short grain rice powder)

step 2. 볼에 삶은 밤을 넣고 으깬 후 밤소 재료를 넣어 섞고, 또 다른 볼에 깨소 재료를 넣어 섞어주세요.
콩소는 3시간 이상 불린 콩을 냄비에 넣고 설탕 1큰술, 소금 1/4작은술을 넣고 15분정도 삶아주세요.
2. Chestnut Filling: Put steamed chestnuts in the bowl and smash them to make Chestnut Filling.
Sesame Filling: Put Sesame Filling ingredients in another bowl and mix them enough.
Black Bean Filling: To make Bean Filling, soak bean in the water more than 3 hrs. Put the soaked beans and other Bean Filling ingredients in the pot, simmer for 15 mins.

step 3. 반죽(20g)을 떼어내 동그랗게 굴려 가운데를 움푹하게 만들어 소를 넣어준 후, 반죽을 꾹 눌러 공기를 빼고 가장자리를 붙여가며 송편 모양을 만들어주세요. (만드는 중에 송편의 겉면이 마를 수 있으므로 젖은 면보 등으로 덮어가며 만들어주세요)
3. Take a piece of the dough (about 20g) and roll it into a ball, press the center of the ball to create a small cup out of it. Fill the cup with one of the fillings, seal it without any air inside. Shape a little ridge on the top. (Cover the remaining dough with a wet towel during making to prevent to be dry)

step 4.호박모양의 송편은 소를 넣고 동그랗게 굴린 반죽을 나무꼬치로 눌러가며 호박모양으로 만들어주세요. (딸기가루로 색을 낸 반죽을 올려 꽃잎을 만드셔도 돼요)
4. For pumpkin Songpyeon, shape the dough with the ridge of the wooden stick. (Decorate with a small pink flower made of strawberry powder)

step 5. 나뭇잎모양의 송편은 쑥가루로 색을 낸 반죽에 소를 넣고 반죽을 굴린 후, 나무꼬치로 눌러가며 나뭇잎모양으로 만들어주세요.
5. For leaf Songpyeon, color the dough with mug wort powder, and shape the dough with the ridge of the wooden stick.

step 6. 김이 오른 찜기에 젖은 면보를 깐 후, 솔잎을 올리고 송편이 서로 붙지 않게 올려주세요. 뚜껑을 덮고 15~20분정도 쪄주세요.
6. Line the steamer with a wet towel and pine needles, put Songpyeon with enough space with each pieces. Close the lid and steam for 15~20 mins.

step 7. 쪄낸 송편을 찬물에 살짝 담갔다가 바로 건져 물기를 뺀 후 참기름에 버무려주세요.
Rinse steamed Songpyeon under cold water and drain, put a little bit of sesame oil to coat each pieces.

step 8. 예쁘게 완성된 송편을 맛있게 즐겨주세요.
8. Enjoy Songpyeon!

오늘은 송편 예쁘게 빚기 자신 없으신 분들도 예쁘고 간단하게 만들수 있는 꽃송편 준비했어요~! 하늘 하늘 예쁜 꽃을 입에 넣는 느낌에 입속에 고소함과 달콤함이 퍼지니 슬며시 미소를 짓게 되네요. 앙증맞은 송편 속엔 호불호 없는 깨소를 넣었어요. 아는 맛이 제일 무섭다고 들 하지용.

설탕이 들어간 소를 넣은 떡은 집에서 찌면 터지기 일쑤라, 터지지 않게 찌는 팁도 넣었습니다. 꼭 명절이 아니더라도 기분 전환겸 한번씩 만들어 먹으면 좋은것 같아요.

[재료] 14개 분량
습식 멥쌀가루 2컵 (200g) (간이 되어 있지 않다면 소금 2g 추가해 주세요)
볶음참깨 25g
설탕 25g
볶음 콩가루 5g (생략 가능)
딸기가루 1g
단호박가루 조금
설탕물 (물6:설탕1) [도구]찜기(대나무 찜기 or 스텐찜기 상관 없습니다.)

[만드는법]
1. 볶은 참깨는 절구로 반 정도 빻고 설탕, 콩가루를 넣어 섞어준다. (소 준비 완료)
2. 물을 끓여 설탕을 넣고 반죽물을 만들어 준다.
속에 달콤한 소를 넣을때엔 반죽도 달콤하게 만들면 찔때 터지지 않는다.

3. 준비한 쌀가루를 반으로 나누어 딸기 가루를 섞어 색을 내준다.
뜨거운 물로 모두 반죽한다.
삼투압 작용으로 반죽의 수분이 뺏기니 촉촉하게 반죽해준다.

4. 한움큼 떼서 고명틀로 찍어 꽃잎을 만들어 준다. (28개 정도)
손으로 빚으면 귀찮긴 해도 더 자연스럽고 예쁩니다.

5. 반죽을 떼서 소를 넣고 둥글게 빚는다.
저는 16g씩 떼서 빚어서 14개가 나왔어요.
살짝 쥐어 공기를 빼준 후 둥글게 빚는다.

6. 꽃잎을 얹고 젖가락이나 마지팬으로 중간을 찍는다.
7. 물솥에 물이 끓으면 15분 쪄준다.
8. 참기름과 식용유를 1:1로 섞고 바른다.
떡끼리 붙는걸 방지하고 떡이 굳는걸 늦춰줍니다.

9. 냠냠

[보관]떡은 당일 바로 먹는게 제일 맛있습니다. 집에서 찐거라 하루만 둬도 굳으니 얼른 드세요~!
빚은 떡은 냉동 보관 후 드실만큼만 쪄 드시는게 좋습니다.
찌고 난 후라면 따뜻할 때 급냉하시고 전자렌지에 데워 드세요.

I’m glad to introduce songpyeon, the traditional food of Korea.
Songpyeon is usually eaten in Chuseok by Koreans.
The reason we eat this is to thank the year’s harvest and because it has been the rice cake. we dedicated to our ancestors.

For those who are not confident in making songpyeon, I prepared flower songpyeon that can make it pretty and simple. Sweetness and savor spread in your mouth as if you were putting a pretty flower in your mouth, making you laugh. Add sesame sauce without likes or dislikes to the cute songpyeon. They say the taste they know is the scariest.

Rice cakes with sugar often burst when made at home, so tips were added to prevent them from bursting. Even if it’s not Chuseok, it’s fun to make it into a refreshment.

[Ingredient]200g Wetmilled rice flour
25g Sugar
Sugar water(Water 6 : Sugar 1)
25g Fried sesame
5g Fried bean powder
a little bit of sweet pumpkin powder
1g strawberry powder
Sesame oil+oil [Tool]Steamer
Cotton cloth
Mousse ring(for leaves) [Process]1. Make the inner ingredient with sugar and mincedfried sesame.
2. Boil water, add sugar, and make dough.
3. Divide the prepared rice flour in half and mix it with strawberry powder to give color.
4. Knead all with hot water.
Moisturize dough as osmotic pressure removes moisture.

5. Remove a handful and dip it into a garnish frame to make petals. (24 to 26)
Make it with your hands, although it’s annoying, it’s more natural and pretty.

6. Rolling the right amount of dough in circle, dig a hole and put
the inner ingredients in it.
7. Put petals on top and dip them in the middle with a chopstick or a marzipan.
8. Steam water for 15 minutes when it boils.
9. Mix sesame oil and cooking oil 1:1 and apply.
Prevent rice cakes from sticking together and slow down aging.
10. Cool it down and eat it. yammy yammy.

[Keep]It’s best to eat rice cake right away on the same day.
It’s good to keep the rice cake in the freezer and steam it.
After you steam it, cool it quickly in the freezer when it’s warm and heat it up in the microwave.
